Tilapia

Not sure how this is going to turn out. I love this Tilapia from Wegman's, pre-packaged individual frozen filets. They thaw quickly and are really delicious. I'm not in the mood, nor hungry enough, to make sides of rice and spinach as I had originally intended, so I opted to do something a little different with the fish. Usually, I will just saute them up in butter and olive oil with Panko crumbs.
Tonight, I lined a pan with foil, poured a very small bit of live oil in it, and laid the two filets on top, swirling them around to coat the bottom with the oil. I spread a little baba ganoush on the top of each, then spread sliced cherry tomatoes and a variety of Greek olives on top. Finish off with some fresh squeezed lemon, salt and pepper. I'm baking them uncovered at 350. Not sure how long.
Also in the oven is a Take & Bake LaBrea French dinner roll.

OMG, it's delicious! Would be better if the tomatoes were roasted just a bit longer. But very good!
Sometimes fish is just perfect with salt, pepper and lemon. Sometimes you want to spice it up. This worked. Yum.
